Im the new IS manager for a company and my first task is to backup all their servers....?

I have a TON of hardware and servers to backup, but I don't know where to begin. My background is only network protocols and user admin. Is there any advice on books I can purchase to help? I have some older servers that I could probably use for iSCSI targets and a pretty robust tape drive (quantum).....HEEEELLLLPPPPPPPPPPPP!!!
